    I'm not shy about having a favorite roaster and mail ordering almost all my coffee from them. About half their selection changes throughout the year, and half is available year round. I can always get something I like from them, and it's fun to try the micro lots and co-op coffees they get in season. If I'm out at an interesting cafe and have a good coffee there, I'll pick up a bag to supplement. Then, if it's not hitting the spot, I have plenty of other coffee to get me through while I'm dialing in. But my main roaster keeps me stocked and happy. It's fine to stick with something you like once you found it. The why is a million little things. The coffee plant, elevation and variety, the soil, the cleaning and dying of the fruit and seed, how it is stored, how it is separated or blended from other coffees, the roaster's decisions about flavor development, the rest after roasting. All that before you get to actually preparing the beverage, now your choice of brewer, the amount of coffee and water, the temperature and minerality of the water, your choice of vessel, the temperature of the beverage as you sip it. And then the character of your surroundings, the time of day, the look, sounds, smells, vibrations of the place where you are. Sometimes everything is just right 😄

    I haven’t had enough recent bags from them to say if there’s been a consistent quality change, but one thing I’ve noticed with coffee companies that grow is that consistency can sometimes become the hardest part. Even good beans can taste very different depending on roast dates, storage, shipping time, or changes in sourcing/roasting processes. If you still have the bags, I’d check roast dates and try brewing with a small grind adjustment first, but if multiple orders are noticeably worse and customer service isn’t responding, that’s a bigger issue than just a bad batch. I hope they’re aware of the feedback because longtime customers are usually the ones who notice changes first.

    i roast for a living so i have opinion on this. its real, not hype. straight off the roaster the bean is full of co2. your bloom goes crazy, water cant get in evenly and the cup tastes flat and a little sharp at same time. for filter i say wait 4 to 7 days. espresso longer, 10 to 14, darker roast needs more. dont take my word. buy one bag, brew day 2 and brew day 6, same grind same everything. you will taste it yourself, nobody needs to explain it to you

    Absolute scam. You're getting nothing or the absolute cheapest slop someone can find to fill a bag and sell while making money still. It definitely will not be "Peets"

    sorry for slow reply, i dont name roasters here, feels like advertising. but i tell you what to look for on the bag and you find it easy. roast date printed, not best by. if they hide the roast date, skip. buy 12oz not 5 pound, you drink it fresh. for brazil look for pulped natural or washed from cerrado or sul de minas, thats your chocolate nut cup, very forgiving. for central, honduras or guatemala washed is the friendly one, little more brightness but not sour. any roaster with a real website that ships direct will have one of these. medium roast, dont go dark for your first, you lose the bean under the roast
