It sounds like you've already described it pretty well. You like full bodied and balanced coffee. Here's the thing about coffee origin. It's not what most people make it out to be. Beans from the very same farm may end up being quite different because of growing conditions that affected that particular harvest. Beans from adjacent farms can end up being far more different due to everything from local differences in soil content to different farming techniques yielding different results. And that doesn't even begin to account for the differences that arise from the same beans being roasted by one roastery or another. While there are some qualities that can be generally true of certain areas, I suspect you're looking for the kind of nail-on-the-head detail that is routinely affected by a great many factors. If you like full bodied and balanced coffees, then I would suggest that you generally look in the area of medium to darker roasts, and avoid single origin. Often times the best way to achieve balance is by blending beans. Same principle applies with win, BTW, which is why wine from places like Italy and France are more often identified regionally. They're usually blends of multiple kinds of grape. Just a quick note, though. You said you like balanced coffees. But then you suggested that maybe you like low acidity coffees. This would be a contradictory suggestion. Balanced coffees have both acidity and bitterness, it's just that neither overpowers the other. A low acid coffee will run on the bitter side. This is how blending coffee beans becomes beneficial, and why a blended coffee is perhaps the best showcase of a roastery's skills.

It actually sounds like your coffee may be suffering more from extraction and water than the beans themselves. “Sour” usually points toward under extraction, while harsh bitterness can come from over-extraction or very dark roasts. RO water can also be a big variable since coffee needs some minerals to extract properly. I try a lighter medium roast from a local roaster, adjust the grind a bit finer, and experiment with properly remineralized water before writing off specialty coffee. Your Moccamaster and ratio sound pretty close there may just be a few small variables hiding in the cup.

"Resting" is a bit of a moving target with some nuggets of truth and some nuggets of nonsense. Coffee needs to "rest" or degas in order to vent the CO2 generated in the bean during roasting. Otherwise, this will effectively 'get in the way' of your extraction and give a very uneven and disappointing brew. This process typically takes 3-5 days to reach an optimal state - you don't need or want all the gas gone, just enough that it's not screwing up your brewing. Coffee should not need to "rest" in the sense of aging wine or preserves. Coffee is degraded by O2, it is exposed to O2 the moment it leaves the roasting drum, and the effect accelerates over time as O2 is liberated within the bean by the oxidation reactions. While there are plenty of roasters who advocate this sort of "resting" for their beans, the only beans I've ever seen improve due to it were significantly underroasted to begin with and as such benefitted from oxidation reactions breaking down excessive and unpleasant acids that should have been addressed during roasting. This is mostly a combination of marketing ("our products are so refined and special they need special treatment") and sales optimization ("our coffee roasted a month ago isn't stale, it needed special resting and has improved").

I did that for five years before I moved to a tiny, remote mountain village. Then I started talking coffee with the coffee shop owner, and shared some of my home roasts, and...yeah. Now I run a nano-roastery. There is one advantage to pro machines, and that's consistency. Heat management and airflow management are more tuned in and configurable, so for any given batch more of the beans come out with the same level of roasting, and you can fine tune it for different beans. It's a nice-to-have but not necessary step up.

We used to do a large group surf trip. One guy, who went for a few years, showed up with 2 of the large tupperware bins of coffee making gear. He'd bring unroasted beans, a grinder, several scales, and several different methods. As we were on a trip we'd just toss Folgers in the Mr Coffee and go, but this guy had a ritual he'd not interrupt. On his last trip he said he'd make coffee for us. OMG it took forever. First to roast, then cool, then he'd pull out what he roasted the day before, would see who wanted coffee and how much, then would do the math and grind the beans. I swear it took like 90 min. Ain't nobody got time for that.
