    It sounds like you've already described it pretty well. You like full bodied and balanced coffee. Here's the thing about coffee origin. It's not what most people make it out to be. Beans from the very same farm may end up being quite different because of growing conditions that affected that particular harvest. Beans from adjacent farms can end up being far more different due to everything from local differences in soil content to different farming techniques yielding different results. And that doesn't even begin to account for the differences that arise from the same beans being roasted by one roastery or another. While there are some qualities that can be generally true of certain areas, I suspect you're looking for the kind of nail-on-the-head detail that is routinely affected by a great many factors. If you like full bodied and balanced coffees, then I would suggest that you generally look in the area of medium to darker roasts, and avoid single origin. Often times the best way to achieve balance is by blending beans. Same principle applies with win, BTW, which is why wine from places like Italy and France are more often identified regionally. They're usually blends of multiple kinds of grape. Just a quick note, though. You said you like balanced coffees. But then you suggested that maybe you like low acidity coffees. This would be a contradictory suggestion. Balanced coffees have both acidity and bitterness, it's just that neither overpowers the other. A low acid coffee will run on the bitter side. This is how blending coffee beans becomes beneficial, and why a blended coffee is perhaps the best showcase of a roastery's skills.

    Yeah that'll work fine, just scale it to your cup size. About 1-1.5 tbsp fine grounds per 8oz water. Put grounds and cold water in a small pot, heat slowly, don't stir too much once it starts warming up. Pull it off right as it starts to foam up, before a full rolling boil. Let it sit a minute so the grounds sink, then pour slowly and leave the last bit in the pot. Fine grounds in a boil like this will over-extract fast if you leave it going too long, so pull it early rather than late. You can also do two short simmers instead of one long one, closer to how actual Turkish coffee is made, gets you a bit less bitterness.

    I am more into the amateurish side of the hobby, but I've found that roast is pretty much what kills or makes the experience for me. I mostly drink moka pot, french press and a wacaco nanopresso that is quite convenient for day to day, and eventually I found out that coffee roast and also origin was pretty much what gave acidic, bitter, or sour notes to my coffee. What I did was finding a place where I enjoyed the coffee beans they get, and pretty much haven't switched beans and roast ever since. For bitterness a little bit of salt may help, but I suggest trying to find the beans and roast you enjoy the most

    I can tell that you really want to learn how to fully appreciate coffee, and I think that with time you'll develop a good sense of how to appreciate many of these different coffees that right now seem like they're not hitting the mark for you. First of all, Trader Joe coffee is terrible. It's not you, it's just them. I've never had Stumptown, but I wouldn't be surprised if their coffee is kinda crappy also. It just screams "well packaged for the discriminating hipster Gen Z wannabe gansta" to me. So it's still probably just them. There's a lot of popular bad coffee out there in the same way that Jose Cuervo is the most popular tequila out there, and Jack Daniels is the most popular whiskey. Both are absolute garbage. One thing that stands out to me is that you mention filling the machine up to such and such line. Coffee machines are very often unreliably marked. For best results weigh both your coffee grounds your water in grams. At the very least, confirm the volume marks on your coffee maker by weighing out water and verifying it reaches the expected mark on the machine. One mL = one g for water. But the biggest thing that stands out most to me is that I get the impression that you're looking for a coffee that is perfect, as is, no assembly required. Making good coffee is as much a culinary experience as making anything else. Every coffee has its own flavors. A chef understands how to take something that might have imperfections, and turn into something more consumable. Generally, this is done by balancing and offsetting imperfections and undesirable traits. For example, some people don't like bussels sprouts. After all, they're very bitter. But if you combine them with something sour, and maybe even add a little fattiness too, those will balance out the bitterness and can yield a very nice dish for something that you otherwise might not like. There is no food item that a chef is going to prepare by simply putting it in front of you, as is. Coffee is the same. The whole purpose of adding either cream and/or sugar is to balance out too much acidity or too much bitterness. So when people say they take their coffee this way or that way, I always kind of chuckle. When people ask me how I take mine, I always tell them it depends on the coffee. I usually just add a bit of sugar, but I have to taste it to know what, if anything, to add. It would probably help you to start understanding how to use additives to complete your coffee. One final thing is that you may want to learn about how origin affects coffee taste. A lot of Americans tend to normalize their idea of coffee's taste to Latin American coffees. Or, as I like to call it, the muddy coffees. For me, Latin American coffees rank at the bottom. I do love Ethiopian, and I might suggest trying to add just a bit of sweetness to balance out the bitterness.

    If your light roast is too sour you can Increase the ratio. Me I find that being more flexible on the ratio it's an easy way for me to get out coffee I want from different roasts. The ratio is really important. For light roasts I'm doing like 1 to 2.5 maybe even 1:3 and that mitigates the overly sour taste. Experiment with that! For dark roasts more like 1:2 but there is still bitterness, but as far as I know that's kind of part of drinking a dark roast.
