I had a similar issue with caffeine for a while. I was drinking coffee every afternoon and started getting some heart fluttery feelings, so I stopped for a bit. After that I mostly switched to cold brew, and I actually prefer the taste now. It feels smoother and fuller to me, so maybe trying a better decaf as cold brew could help with that “flat” flavor.

Caffeine? Use robusta coffee. It has the twice the caffeine content than arabica. Most instant coffees are made from robusta. Rarely you will get it 100% in cafe but it is also common in Italian style blends as a blend component
