   Probably because most big brands roast pretty dark. It’s kind of hard to tell them apart because when they’re roasted that dark, you mostly just get like nutty, chocolatey, roasty flavors. Light roasted coffees tend to have more variety based on where and how the coffees were grown / processed. It’s like whiskey. There are all kinds of whiskeys with a wide variety of flavors. But if you mix them with Coke they pretty much all just taste the same.

   sorry for slow reply, i dont name roasters here, feels like advertising. but i tell you what to look for on the bag and you find it easy. roast date printed, not best by. if they hide the roast date, skip. buy 12oz not 5 pound, you drink it fresh. for brazil look for pulped natural or washed from cerrado or sul de minas, thats your chocolate nut cup, very forgiving. for central, honduras or guatemala washed is the friendly one, little more brightness but not sour. any roaster with a real website that ships direct will have one of these. medium roast, dont go dark for your first, you lose the bean under the roast

   They are often roasted that dark because it hides a lot of the lesser qualities in the green. If you try out home roasting (and I recommend it, it's a lot of fun and for darker roasts it's not that hard to get some really nice roasts), you will quickly find that lesser quality beans don't do well with lighter roasts. You have to roast them fairly dark to turn those flavors into something nice. I often end up turning a bean into espresso, because I don't like the green roasted lightly.

   well, supermarket beans are all on the scale dark to burned. While speciality coffee treats dark very different. All roasts from the supermarket are too dark / too bitter for me. What i look for are medium roasts at local roasters with descriptions of sweet things (honey, blueberry, milk chocolate. Avoiding anything with the words espresso, dark chocolate or citrus fruits. What i usually get is just decent coffee, not the most interesting coffee i have ever tried, but coffee i enjoy everyday. And sometimes you just get a roaster who just likes dark beans (probably espresso lovers) they fall into the to dark to drink category - black oily beans.

   I haven tried it, it’s in my post. I’m just confused at how dark the TJ dark roasts are and how sour the stumptown is. Even when I try different grind sizes it’s still leaning stronger in each direction.
