I’ve settled pretty exclusively on my 97 La Pavoni Pro. Heat milk in a pan to 85° Celsius, hand froth in my glass Bialetti frother. Espresso gets shot into 8g of jaggery sugar. Life is good. I’ve got so many other tools, and I still use my Hario Teknica siphon for my wife fairly often, but the LP just slaps.

Not a conspiracy as much as a trend In my opinion. Coffee shops often follow the same flavor forecasts because syrup companies, ingredient, suppliers, sugar and social media trends all influence what gets popular. Once a flavor starts performing well on YouTube or in big chains, smaller shops usually experiment with their own version. The interesting part is seeing how each café puts its own spin on it the same orange latte can taste completely different depending on the espresso, cappuccino, Mocha, milk and recipe.

i run a cafe so let me give you the ugly answer. its not that they dont know. its that the person making it has been there 6 weeks and nobody had time to train the milk properly. flat white is the hardest drink to teach because everything is in the texture. latte you can hide behind volume. flat white there is nowhere to hide, milk is thin, so if the steam is wrong you taste it immediately. takes weeks of practice with real milk you throw away. thats expensive and most places wont eat that cost. the 2 places that got it right, somebody there cares. thats the whole difference

Coffee isn't decaffeinated and milk comes from mammals, 2 fundemtals of life. The nasty chemicals used to decafinate coffee is just wrong

Shaking espresso with ice cubes speeds chilling and breaks out more crema, so the latte tastes sweeter and feels smoother to me, especially with milk that would otherwise mute the sharp notes. If your espresso runs thin or you use big cubes, dilution kicks in fast and kills flavor.
