   I am more into the amateurish side of the hobby, but I've found that roast is pretty much what kills or makes the experience for me. I mostly drink moka pot, french press and a wacaco nanopresso that is quite convenient for day to day, and eventually I found out that coffee roast and also origin was pretty much what gave acidic, bitter, or sour notes to my coffee. What I did was finding a place where I enjoyed the coffee beans they get, and pretty much haven't switched beans and roast ever since. For bitterness a little bit of salt may help, but I suggest trying to find the beans and roast you enjoy the most

   I find I can get a passably good coffee roast far easier than I can get passably good espresso. Roasting has been interesting in that the difference in quality seems to be much more tied to the bean than the roast. I’m not saying I can get as good results as a “pro” but the interesting thing is that almost any roast you happen to land on will be one that someone likes. It’s not as hard to get a “good” roast as it is to get a specific targeted roast.

   There are many advantages to pro machines. I'd love to spend that kind of money and dial in roasts. Also like home brewing, home roasting can become a really expensive hobby, but one where you may even surpass professional roasters in quality. My hat is off to anyone who takes their hobby that seriously. For me, though, I'm looking for solid quality, but cheaper cost. And this set up works for me.

   You'll get better cups, sure, but supermarket green beans often sit around too long and some have defects from storage, so the roast can't fully fix it.

   It depends on the coffee. Roasters can’t add flavors beyond ‘roast’ flavor, the sweetness or hints of fruit or how chocolatey it tastes is based on the coffee itself.
