   Yep - aeropress, pre-weighed beans, slide into empty meeting room to grind, use urn water cooled off in an old French press carafe and away we go. 12g - 200g water - 45s bloom (30g) - 1min strep with rest of water - 45s press.

   Where does this nonsense come from? Oh yes, James Hoffman. He's an idiot spewing clicky garbage for gullible morons on the internet. For crying out loud he wants to put a cup of coffee into a sous vide machine. Stop with this insanity, people. Steaming water (as in, injecting steam into liquid water) will not "aerate" it. Steam is water vapor, not air. And when you inject pockets of water vapor into liquid water, the vapor will quickly cool into liquid water. If this confuses you let's talk about it again after you've passed high school chemistry. "Aerating" water means to dissolve gases into the water. In other words, the liquid water stays pretty much the same, it just has some additional solutes in it. If you want to blow air bubbles into water to change its texture (as if to vaguely imitate the process of steaming milk) it's not going to work. Milk is an emulsion of proteins and fat in water. Water is just water. It's the proteins and fat the milk that enables the change in texture that comes from steaming milk.
