Each point is a seven-day rolling window of complete UTC days; a point is comparable only when at least 100 analyzed posts or comments fall inside it. A day with no analyzed records counts as zero; missing coverage is marked and never shown as zero. The series ends at the latest complete analyzed day — it never extends into the current incomplete day. How attention is measured.

Unlike regular white potatoes (where green indicates a toxic buildup of solanine), sweet potatoes turn green due to a completely harmless chemical reaction. Sweet potatoes contain natural antioxidants called chlorogenic acid. When chlorogenic acid interacts with the amino acids in the beef or baking environment under alkaline conditions, it turns a striking blue-green or moss-green color. This part of the color change is natural and safe. While the green color itself is a harmless chemical reaction, the terrible sour taste is a major red flag for bacterial spoilage or fermentation. If you packed the beef and sweet potatoes together while they were still hot, or if your fridge wasn't cold enough, you likely created a "greenhouse effect" inside the airtight container. Trap heat and moisture with low-acid foods (like beef and potatoes), and bacteria will rapidly multiply, causing the food to sour and spoil in just a few days

Fair enough, for a few days in the fridge you're totally fine. I just wanted to make sure nobody read it as shelf-stable, since that's where the botulism risk actually matters.

  3. Comment

Hot from the oven isn't the same as properly canned though. Low-acid foods like meat soups need pressure canning to reach temps high enough to kill botulism spores. A hot jar in the fridge for a few days is fine, but treating it like shelf-stable canned food is a real risk.

chicken and pasta is such a solid combo for meal prep. i usually do mine for about 3-4 days max, just to keep it fresh. you'll find a rhythm that works for you, but starting with a few days is a great idea. keep it up, you got this.

  5. Comment

For chicken and pasta I'd prep 3-4 days at a time and freeze whatever is for later in the week. Cook the pasta a minute short and keep the sauce separate if you can, so it doesn't go mushy when you reheat. Thighs also hold up better than breasts over a few days.
