   Veg on a budget - refried bean tostadas! Top with cheese lettuce salsa whatever you have. You can prep the toppings, heat the beans and cheese on the tostada, 5 min in the oven. My kids love tostada night and I love how cheap it is!

   Another tip I find salad stays longer in glass. But you have to wash and dry (dry THOROUGHLY like in a salad spinner) first. If you’re interested in meal prepping salads specifically, I found an excellent (old) post here for “mason jar salad” — I tried a bunch of the recipes and I haven’t had a miss yet. The trick is to put the lettuce in last, on top, and the dressing at the bottom, but definitely check out those receipts for ideas if you’re into the mason jar salad approach. I don’t do it every week—usually I just prep salad ingredients and keep them separate until I’m ready to toss & eat. But the few times I’ve made the full salad in each jar, I was impressed by how well it worked out in terms of taste and freshness.
