Companies that are trying to make lab grown cocoa have not yet commercialized their efforts and can't yet produce significant volumes of cocoa. It will probably be a few years before this happens (if it happens at all). Additionally, there are no labeling requirements yet to distinguish cultured cocoa from natural cocoa (that's in the works).

A lot of cocoa power is alkalized/dutched which makes it easier to dissolve in water (and milk). This alkalization process can also affect theobromine concentrations as well as the concentration of other compounds that work alongside theobromine to produce a stimulating effect. If you want to run an experiment, buy some non-dutched cocoa powder and see if this version also makes you sleepy or not. If so, it's probably a psychological effect of the comforting warm milk drink.

The good stuff lists the cocoa content on the label. You can get it in the states, but not from hershet.

Yes a tutorial would be helpful. Can this work without colored cocoa butter, maybe with chocolate alone ?
