    Lindt, Milka, Godiva and Leonidas are industrial brands. Valrhona and Callebaut are couverture houses: they mostly sell in bulk to pastry kitchens, which is why you've heard of them but never see them on the shelf next to Lindt. The third category, small batch bean to bar, isn't on your list at all, and it's the one you're actually describing. One thing that changed how I buy chocolate (and I've seen more chocolate bars than is healthy): none of the Lindt Excellence bars tell you where the beans came from. Going from 70 to 85 to 90 buys you less sugar, not better cacao. A few of the Lindor flavours have palm kernel oil as the second or third ingredient. You're on the West Coast, which is a great place in the country for this. My favorites: * Dandelion, San Francisco. The Ransiki 70% is two ingredients, beans and sugar. They ahve a shop on 16th St. * Dick Taylor, Eureka. Belize Toledo 72%, also two ingredients. * Spinnaker, Seattle, if you're further north. The 70% Uganda. Quick rule I use: two to four ingredients means its chocolate, not just candy. I try to avoid vanillin, or vegetable fat that isn't cocoa butter.

    I am happy to ship nationwide from Maryland. We produce our own bonbons with Felchlin and Guittard. Along with carry a variety of craft bars.     Look up “bean to bar chocolate” near you! I think the best is Third Wave Chocolate Co but that’s because I own and run it! West coast would be Dandelion San diego chocolate co Spinnaker Dick Taylor Those are the bigger ones off of the top of my head

    Looking for good chocolate brands available in the U.S. - I live on the West Coast of the U.S., and I feel like the problem with asking this question is that everyone has such different preferences when it comes to chocolate. The brands I already know of are: * Lindt * Godiva * Leonidas * Milka I've also heard of Valrhona and Callebaut, but haven't tried either. I'm wondering if some of these brands are significantly better in Europe than what we get here in the U.S.? What are your favorite high-quality chocolate brands that are actually available in the U.S.? I'm especially interested in brands that are a step above the typical grocery-store chocolate.
